I awoke this morning feeling great and ready to start the day! The smell of coffee steeping in my french press awakened my senses. I lazily drank my coffee until my stomach started to rumble and I realized that I had not yet thought about eating breakfast. I quickly realized that I had finished off my granola to eat with my yogurt, no eggs, no bread, no cereal, etc. What's a girl to do?My first notion was to run to the local store that is just a five minute walk from my place. I could get some eggs and whip up a tasty breakfast in no time. Stop. Wait. Pause for the realization that I am trying to be a person that knows the food in my pantry and fridge and doesn't just run to the store every time I think I'm out of options.
I looked around and took inventory. I have old-fashioned oats that can be boiled with water or milk to make oatmeal. Yes! I often forget this in the summer when I tend to not eat oatmeal. Ah, I have a handful of fresh blueberries left over from the whole-wheat blueberry pancakes I made two days ago.
Just like that, I had breakfast! I made the oatmeal, added a bit of brown sugar and threw in the blueberries and it was delight for my taste-buds and rumbling tummy. And, I didn't run to the store - success!
